Healthy Corn Chowder!!!! ITS CORE!!!

Ok...well as most of you know I have been doing weight watchers for about 13 weeks now, I have been on CORE for over 4 weeks and I thought I would share with you one of my favorite CORE recipes. I found it in the "Ultimate Flex & Core Cookbook" that I bought at one of my weight watchers meetings.

FRESH CORN CHOWDER


-4 tsp canola oil
-1/2 cup seeded and finely chopped green bell pepper
-1/2 cup seeded and finely chopped red bell pepper
-1/2 cup minced shallots
-1 teaspoon curry powder
-3 cups fresh corn kernels(I use two cans)
-3/4 pound red potatoes, peeled and cut into 1/4 inch cubes
-1 cup vegetable broth
-1/2 tsp. salt
-Freshly ground pepper to taste
-3 cups fat free milk
-1/8 teaspoon paprika

PREP-20 Minutes
Cook-About 20 Minutes
Serves-4(1 1/2 cup servings) 5 Points per serving if you are doing FLEX

1. Heat the oil in a large nonstick saucepan over medium heat. Add the bell peppers and shallots; cook, stirring occasionally, until tender, about 5 minutes. Add the curry powder and cook, stirring constantly, until just fragrant, about 30 seconds.

2. Stir in the corn, potatoes, broth, salt and pepper; bring to a boil. Reduce the heat and simmer, covered, until the vegetables are tender, about 10 minutes.

3. Transfer 1/2 cup of the vegetable mixture to a blenderl add the milk and puree until nearly smooth. Return to the suacepan and cook over medium heat, stirring, until just heated through. Sprinkle with the paprika just before serving.

And that's it. Seriously...I have made this over 4 times now and the page in my book is scarred with a few spilled ingredients...because I am a sloppy cook! This is a hearty soup perfect for a guilt free dinner. And Sean LOVES IT!!! The curry powder gives it a tasteful kick. This would be great for a party as well.

Later I will be making Fresh Tomato Soup...its all core baby!!!

Okay, here's my question... how do you stay motivated to lose so much weight? I really need to lose some too, probably 25-30 lbs. I want to lose it, but my self-control is just not there, especially when I am tired. I am going to TOPS which has helped me in the past to lose 20 lbs and keep it off (until the next pregnancy that is). You are at home with your kids... how do you stay out of the cupboards?

I think identifying your "triggers" is half the battle. You have already mentioned that you have less self-control when you are tired. That is a trigger for you. I would advise you to turn off all the kitchen lights at a certain time and tell your mind and body that the "kitchen is closed" and don't go in there again.

I stay out of the cupboards for a few reasons. I don't bring anything that is a trigger for me. i.e. cookies, cake, etc. I know that there isn't anything like that in my pantry so I don't go looking for it.

Jack is right...I have my computer docked on my counter so instead of eating I might type for a minute or drink some water if I am feeling like I might make a bad choice.

Honestly, if you are motivated to lose the 25-30 pounds that you want to lose nothing will get in your way. Weight loss is a mental game.

Sounds very similar to a recipe I have enjoyed for years!! {except I don't use fat free milk} You could also probably add a can of creamed corn to make it "creamier". I am *so* in a soup mood, especially since the weather has been cooler!

SWEET!! I'm not one who can count points. I think I'd go crazy or get overly fixated. BUT it's so nice to hear the low-fat recipes that people like!! Thanks!

Oh and for Alisa...here's a tip I use for those times you're really wanting to NOT eat something, but have a craving. Chew some strong mint gum. It works for me.
