And to my left we have.....

My calendar, two casserole cookbooks, a slow cooker cookbook and my "where I write everything important" notebook. I have begun "meal planning". Thank you so much for posting all your meal planning tips and lists. I have been inspired!

So...come one come all...post your favorite casserole that uses boneless skinless chicken breasts! Bonus points to the post that is the fewest calories!

Doubt this is low in calories but we used to love to make this one:
chicken breasts
cover with sour cream and crm of mushroom soup
top with stovetop stuffing (the recipe calls for one box but we love stuffing so I like cooking up a 2nd box!)

I think someone mentioned this on your last post but recipezaar is an awesome site. You could just type in chicken and it gives you different options, slowcooker, soups, OAMC stuff like that, and the plus side it has the nutrition facts too!! :0)

We eat a lot of soup--it's cheap and healthy. Tortilla soup is a good one with chicken and the crock pot because you can put the frozen breasts right into the cooker and they shred them before you serve the soup. I don't have an exact recipe for this because I use what's on hand, but here goes:

4 chicken breasts, frozen or thawed
2 cans black beans
1 can chicken broth
1 can mexican tomatoes (Rotel)
1 can diced tomatoes
1 cup salsa (as hot as you like it)
1 clove garlic
cumin and chili powder to taste

Plop everything into the crock pot and cook on low all day--I'd say about 6-8 hours depending on if you're using frozen chicken.
Pull the chicken out and shred before serving. Put it back into the soup and serve with shredded cheese and tortilla chips.
